Gluten consists of the proteins gliadin and glutenin. Gluten has been found to be the protein-containing portion of certain grains such as wheat, rye, oats and barley. Gluten is pervasive in the Standard American Diet. Over two million Americans suffer from gluten sensitivity, but there are believed to be millions more who have gluten sensitivity, but have not been formally diagnosed. Gluten sensitivity is caused by an abnormal immune response to partially digested gluten. When gluten is not completely digested, protein fragments known as peptides can trigger an autoimmune response that can lead to conditions which can damage the lining of the small intestine. This damage can create malabsorption of nutrients resulting in malnutrition, weight loss, and severe nutrient deficiency. The digestive enzymes found in Gluten Digestive Enzyme help support the digestion of starch as well as the proteins gluten and casein and the formula helps support a healthy intestinal tract in individuals with gluten sensitivity. Gluten Digestive Enzyme contains a comprehensive blend of carbohydrate and protein digesting enzymes including Dipeptidyl Peptidase IV (DPP IV) which helps to fully metabolize peptides that can result from the incomplete digestion of gluten. This enzyme blend is formulated to be active in a wide pH range to support the complete digestion of protein both in the stomach and small intestine. Finally there are three different amylases in this formulation to provide for the complete breakdown of starch allowing the proteases greater access to gluten.
